Pulled Pork Casserole

I thought up this recipe one day as I was trying to think of something to make with a pork shoulder I had sitting in my freezer. Pulled pork was the first thing that came to mind but I wanted some sort of casserole as they are easy to throw together and can feed lots of people. This casserole reheats well and tastes just as good the next day. I used a large chunk of pork so after I cooked and mixed it with the bbq sauce, I only used half in the casserole and stored the other half in the freezer. The bbq sauce is just my attempt of making a healthier version after looking at some recipes online. You can adjust all the amounts and add any spices to your liking.

Pulled Pork Casserole

Ingredients:

3 to 6 lb pork shoulder or roast

2 tablespoons each of garlic powder & chili powder

1 tablespoon each of smoked paprika & red pepper flakes

Salt and pepper to taste

½ cup broth of choice

Homemade BBQ sauce (recipe below)

1 head cauliflower

1 tablespoon butter

2 tablespoons plain Greek yogurt or sour cream

½ cup grated cheddar cheese

Directions:

Mix garlic powder, chili powder, smoked paprika, red pepper flakes, salt and pepper. Rub dry mix onto pork. Place in slow cooker with broth and cook on low for 8 hours. Once cooked and cooled slightly, use two forks to pull pork apart into small pieces. Mix pork with BBQ sauce and spread evenly on bottom of a large oven safe dish. Wash and cut cauliflower into large pieces and place in a large pot. Cover with water and boil for 15-20 minutes or until very soft. Drain water and add butter and Greek yogurt. Mash cauliflower into a smooth consistency. You may add any spices you like. Spoon cauliflower mash over pork and spread evenly. Sprinkle cheddar cheese and additional smoked paprika on top. Bake in 350 oven for 30 to 35 minutes.

BBQ sauce:

Ingredients:

1 7 oz can tomato paste

¼ cup balsamic vinegar

¼ cup unsweetened applesauce

1 tablespoon each of garlic powder, chili powder & smoked paprika

Salt and pepper to taste

Directions:

Mix all ingredients and simmer on low heat for 30 minutes.
